All of the products sold at Bucky's Butchery originate from University owned animals from our University owned farms. All of the animals used for processing are raised with the highest level of care in well-managed facilities.
Many of the animals used to produce our products have been used for educational purposes within the University. An example of this education could be as follows: A class that teaches live animal/carcass evaluation (anatomy, quality, lean meat yield) often assess these traits when the animals are both alive and in post-mortem (carcass) form. The UW Meat Laboratory assists in this education by harvesting animals after live evaluations are made so subsequent carcass evaluation can occur. This system of evaluation allows a greater understanding and learning about the important traits certain animal possess, which are objectively measured in the carcass and can then be related back to the live animal. With this understanding, farmers and ranchers can better select and raise livestock that are more demanded by the meat industry and desired by consumers like you.
The UW Meat Laboratory works with the state of Wisconsin Meat Inspection Program to ensure that products sold through our store meet requirements set by the state and federal government for purity, wholesomeness and safety. We operate under our own HACCP (Hazard Anaylsis and Critical Control Points) system which is a very extensive food safety program. Students participating in animal harvest, meat fabrication and processing receive HACCP training every year.
