Welcome to the UW Meat Laboratory and Bucky's Butchery!

The UW Meat Laboratory is a UW student staffed facility. UW students who are learning about meat science and prcessing, are involoved with the manufacture of the fresh cuts of meats as well as sausages. Bucky’s Butchery gives students hands on experience with the transformation from animal to final product.

Although the Muscle Biology & Meat Laboratory has been on campus for years, Bucky's Butchery is a recent addition. Bucky's Butchery officially opened for business in August of 2007 in a converted spice room at the Meat Laboratory. One day Bucky's Butchery will be as well known throughout Wisconsin as Babcock Ice Cream.

Stop in on Fridays and give Bucky's Butchery a try! We are open every Friday from noon to 5:00pm and located inside the UW Meat Science & Muscle Biology Laboratory at 1805 Linden Drive. Look for the tan building just west of the white pedestrian bridge over Campus Drive.
